  5. Let this rise in a warm place for 3-4 hours to double in size. Alternatively, let this cold prove in the refrigerator for 12-48 hours. (If cold proving, allow the dough to come to room temperature before baking.)
  6. Line the base of your Sourdough Pan with baking paper and coat the top of the baking paper with a little olive oil. Tip the dough into the pan and ease it to the edge with wet fingers, then dimple the dough.
  7. Mix together the topping ingredients, then spread the surface of the focaccia dough with the topping mix and let this sit while you heat the oven to 230°C for 20 minutes.
  8. Bake for 25-30 minutes or until golden.
